Overview

What this drink is like

The first sip is all tropical fruit and citrus, sweet and bright. The middle brings out the funky, rich depth of the blended rums and the spice of the falernum. It finishes warm and lingering, with the heavy booze creeping up on you.

Who will like it

For people who like fruity, tropical drinks that don't shy away from a serious alcohol kick.

When to drink

Drink this at the start of a long afternoon or evening out, but maybe limit yourself to one.

Ordering tip

Ask the bartender if they use a blend of three rums—if they just pour one light rum, you're getting a watered-down version of the real thing.

Flavor

Taste profile

This drink is a tropical fruit bomb that masks a massive amount of alcohol. The lime and syrups hit first, sweet and tart, followed by the funky, rich flavors of the Jamaican and Demerara rums. It feels light and icy in your mouth, but the warmth of all that booze builds quickly, leaving a lingering, spiced finish.

Finish: The finish is long and warming, with the rich, funky notes of the rum and a hint of almond spice lingering after the fruit fades.

Steps

  1. 1

Pour a tiny splash of absinthe into your serving glass, swirl it around to coat the inside, and dump the excess. This leaves a faint herbal aroma that makes the drink pop.

!Using too much absinthe will overpower the rum

  2. 2

Add the light rum, Jamaican rum, Demerara rum, lime juice, falernum, grenadine, and Angostura bitters to your shaker. You're building the whole drink in the tin before the ice goes in.

!Forgetting a rum throws off the layered flavor profile

  3. 3

Fill the shaker to the top with crushed ice. Shake it hard for about 10 seconds until the outside of the shaker is completely frosted over and too cold to hold.

    ~10s

!Shaking too gently won't dilute the thick rums and syrups enough

  4. 4

Double strain the mixture into your absinthe-rinsed glass by pouring through the Hawthorne strainer and a fine mesh strainer. This keeps the small ice shards and pulp out of the final drink.

!Skipping the fine strainer leaves gritty ice shards in the drink

  5. 5

Top the glass with more crushed ice, packing it slightly above the rim. Stick your mint sprig and lime wheel into the ice so they sit up where you can smell them.

!Letting the ice sit too low before garnishing makes the drink look flat

Serve

Serve it right away while it's frosty cold. The crushed ice will slowly melt, keeping the strong rums drinkable as you sip.

Practical

Tips & pitfalls

What works at home and what to skip when making this drink.

Tips

Worth knowing before you pour

  • Use fresh lime juice; the bottled stuff ruins the balance.
  • Don't skip the Demerara rum; it gives the drink its heavy backbone.
  • Crushed ice is essential to keep this strong drink diluted and cold.

Avoid

Common mistakes

  • Using cheap, overly sweet grenadine makes it taste like cough syrup.
  • Shaking too short leaves the heavy rums unblended and harsh.
